Happy Thursday! Not sure that anyone noticed, but I went a little radio silent last week – I was having some issues with my site and given the fact that I’m no hosting expert, nor a developer, it took a few days for me to get it resolved. Since that minor freakout, I’ve never been so excited to to publish a new post. Especially, when the photos get me as excited as these do. This. drink. though.. It speaks spring.

While I’m not a huge liquor drinker, I usually do love any cocktail that involves tequila. Normally, when it comes to margaritas I steer clear of anything fruity or sweet and stick to classic lime. But, this pomegranate grapefruit paloma is changing my mind. Combining one of my favorite things ever – LaCroix – with two tart fruit juices makes this right up my alley. Annnnd I’m of course a fan of throwing a few pomegranate seeds on anything and watching what it does for my dish and culinary confidence.

Although I haven’t tested alternative options, I can imagine this is a cocktail that can be easily played with – switching grapefruit LaCroix for classic or adding orange juice instead of pomegranate? TBD, but if you try it, report back!

And note to self: Next time, edit cocktail photos before you start Whole30. These were almost too tempting to have my eyes on.

Ingredients

For two palomas:

  • 1/2 c silver tequila
  • 1/4 c pomegranate juice
  • 1/4 c grapefruit juice
  • 2 tbsp lime juice
  • 1/2 c sparkling water or club soda
  • 1-2 tsp simple syrup
  • Salt and lime juice, for rim
  • Grapefruit slice, for garnish
  • Pomegranate seeds, to top

Instructions

  1. Using the juice of a lime, rub the rims of two serving glasses, dip into salt.
  2. Pour the tequila, along with the pomegranate, grapefruit and lime juice into a cocktail shaker.
  3. Add the simple syrup. Stir.
  4. Pour into serving glasses over ice and fill the remainder of the glasses with sparkling water.
  5. Garnish with a grapefruit slice and pomegranate seeds.
