I find it fitting that the first post back after a vacation hiatus includes a cocktail, no? It’s been a bit since I posted and after 3 weeks off (half of which was travel), I’m back into the swing of things. Not without quite a few happy hours and ice cream runs last week – you’ve got to ease yourself back in from vacation, right?
Before I left for Europe, I was asked by Mountain Valley Spring Water to create a recipe, and of course, I humbly agreed! I’d never tried their products before, but given that the recipe need to include flavored sparkling water – which I need like I need air – this was the perfect fit for my taste. This lovely company has been round since 1871, has made a huge efforts to preserve the land they use and were the first natural spring water company to be delivered coast to coast. Shame on me for not having tried their water sooner.
This cocktail incorporates their new sparkling water flavor – White Peach. And with the abundance of peaches in stores right now, it was easy to incorporate fresh, seasonal fruit. I included a simple peach puree which took me all of 30 seconds in my cheap blender. (Just make sure you do this minutes before serving, otherwise it’ll lose it’s color and look gross, which happened during my first batch.) It also calls for fresh rosemary simple syrup which could quite possibly be the easiest, but most delicious ingredient that’s ever grazed my stovetop. For not really being a vodka drinker – this feels fresh and light, and I will certainly be recreating it as the temps creep up.
